Don't confuse Full Screen with Maximized, different things and different view. Maximize fills the screen fully with all the program's toolbars, status bar, etc. Full Screen [reached by pressing the F11 key] removes most tool bars to give room for more information in the program's window.
For text, holding down the Ctrl key and pressing + or - resizes the data inside the window, so does Ctrl and rolling the mouse wheel.
